The kitchen proudly features premium beef from Gilligan’s Farm & Butcher, tender Connemara lamb from Keogh’s of Oughterard, and the freshest seafood straight from Galway Bay & Moycullen Seafoods. They celebrate the wild flavours of the region with foraged ingredients from Thalli, and the cheese selection is enriched with the artisanal quality of Kylemore Cheese, crafted from the milk of Teresa Roche’s dairy farm. Even the eggs come with a story, sourced from the passionate farmers at Mad Yolk Farm.
